This Nation Deserves A Celebration

Two hundred and fifty years is a longtime.
Our country has seen wars, a severe economic depression, prosperity, joy, sadness, a pandemic, good times and bad.
Thousands have died on foreign soil defending our democracy; cures have been discovered for life threatening diseases; and yes, we were first to send man to the moon taking “one small step for man and one giant leap for mankind,” as astronaut Neil Armstrong so proudly announced.
Life in our United States of America is truly good. Indeed, we’re a blessed nation.
But even so there are still challenges before us that remain to be addressed.
There’s an abundance of poverty and homelessness; a desperate need to find cures for cancer, ALS, and other illnesses; and there are racial, social, and political divides that keep us from being the best we can be.
Our nation’s history tells us that we’ve solved problems such as these before and promises that we will again.
For sure 250 years is a longtime and most deserving of a celebration like we’ve never seen before.
My family and I will celebrate the Fourth of July like most families. We’ll find time, despite it being in the height of election season, to eat a hamburger covered in a slice or two of a homegrown tomato (I like those ugly heirloom tomatoes best), catch a fireworks show, and surely dive into a bowl of homemade peach ice cream (my personal favorite).
Most importantly though, Chelsea, my two boys and I will set aside time to thank our God for the privilege of living in a nation where we are free to worship, where democracy rules, where government is open and for the people, and where hope is always alive and well.

Homemade Peach Ice Cream
Ingredients:
• 2 cups chopped peaches (peel removed)
• 1 1/4 cups Granulated sugar (divided)
• 2 cups heavy cream
• 1 cup whole milk
• 1/2 tsp vanilla extract
Mix chopped peaches with 1/2 cup sugar in a medium sized bowl. Allow to set for about 15 minutes so peach pieces release their juices.
Blend peaches in a blender or food processor until smooth. (Add 1/4 cup of whole milk if more liquid is needed to blend)
In a large bowl combine peach mixture with heavy cream, whole milk, vanilla extract, and remaining 3/4 cup sugar. Set aside.
Pour mixture into the running ice cream maker and follow manufacturer’s instructions.
When ice cream reaches desired texture, scoop and serve.
